I loved the idea of simple ingredients for a weeknight dinner and not a long list at the grocery store. I was amazed at how quickly it all came together and roasted in no time too.

Once I tasted it right out of the oven (I was anxious to try it) I loved the flavor and I was a little skeptical of how the Gnocchi would roast. Once we had this for dinner I told myself this isn’t just a weeknight dinner but I would make for family and friends. It is a wonderful pasta recipe!
