2 cups Watermelon cut into ~1-inch cubes, about 24 pieces 12 ciliegine mozzarella balls or one large mozzarella ball cut into 12 bite-sized cubes 12 small fresh basil leaves flaky sea salt such as Maldon, to taste 2 tablespoons balsamic glaze for drizzling before serving
Cube the watermelon and drain the mozzarella balls if needed.
On each skewer or toothpick, layer one cube of watermelon, one basil leaf, one mozzarella ball, and end with another cube of watermelon.
Arrange on a platter.
Right before serving, drizzle with balsamic glaze and finish with a sprinkle of flaky sea salt
Use ciliegine mozzarella balls for the perfect size, or cut a large mozzarella ball into cubes.
Do not prep the basil leaves ahead —they can bruise or turn black in the fridge.
Wait to drizzle the balsamic glaze and sprinkle sea salt until just before serving for the best flavor and texture.
Serve chilled for a refreshing, hydrating appetizer on hot summer days.
