Pork Milanese Recipe

This Pork Milanese recipe is a twist on the classic chicken or veal Milanese. It’s the perfect weeknight dinner to pair with a simple side dish and comes together in under 30 minutes. It's affordable, yet elegant and restaurant-quality in every bite.

Ingredients
  

  • 4 boneless pork loin cutlets pounded to ¼-inch thickness
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups plain bread crumbs
  • cup finely grated Parmesan cheese
  • ½ cup olive oil for frying
  • 2 tablespoons unsalted butter, for frying
  • flaky sea salt, for serving
  • lemon wedges for serving

Instructions
 

  • Pound pork to about ¼-inch thickness. Season both sides with salt and pepper.
  • Place the flour in a shallow bowl.
  • In a second bowl, beat the eggs.
  • In a third bowl, combine the plain breadcrumbs and Parmesan cheese.
  • Dredge each pork cutlet in the flour, shaking off any excess; dip in the beaten eggs, then press into the breadcrumb mixture until evenly coated.
  • Heat the olive oil and butter in a large frying pan over medium heat. Cook the pork cutlets for 2–3 minutes per side, until golden brown and cooked through. The pork should reach an internal temperature of 145°F.
  • Transfer the cooked pork cutlets to a wire rack set over a baking sheet. If not serving immediately, place in a 250°F oven to keep warm until ready to serve.
  • Sprinkle the pork cutlets with flaky sea salt and serve immediately with lemon wedges.

Notes

  • For extra crispiness, let the breaded pork rest for 5 minutes before frying.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F oven until warmed through and crisp.
  • You can substitute chicken cutlets or veal for pork to make variations of Milanese.
